South wind cake

A rustling, overwhelming dessert of perfect taste. Often seen at various celebrations. I like to make it even when I’m not celebrating anything because it always delights me again and again.

INGREDIENTS:

For biscuits:

  • 10 egg whites
  • 10 tablespoons sugar
  • 4 tablespoons flour
  • 200 g of ground walnuts

For cream:

  • 600 ml of milk
  • 10 egg yolks
  • 100 g density
  • 10 tablespoons sugar
  • 150 g of ground walnuts
  • 250 g butter or margarine

PREPARATION:

  1. Turn on the oven to preheat to 200 degrees.
  2. Beat 5 egg whites with 5 tablespoons of sugar in solid “snow”, then add 2 tablespoons of flour and 100 g of ground walnuts.
  3. Place the baking paper in a 25 x 35 cm baking tray, then shake out the biscuit mass and bake.
  4. Reduce the temperature to 180 degrees and bake for 20 minutes, up to 25, depending on the oven.
  5. While the biscuit is baking, prepare the second one, in the same way as the first one, and bake it as well.
  6. Mix egg yolks, density and sugar, then add a little cold milk of those 600ml, and put the rest of the milk to boil.
  7. When the milk boils, add the egg yolks and stir over medium heat until it thickens.
  8. Remove from the heat, cover with foil directly on the cream, then leave to cool.
  9. When the cream has cooled, whisk the butter or margarine until foamy, then add it to the cooled cream.
  10. Then add the ground walnuts and combine everything.
  11. Cut the biscuits lengthwise to get 4 narrow and long biscuits.
  12. Fill the biscuits with the egg yolk filling. The filling has enough for both the biscuits and around the cake.
  13. Decorate and leave to cool.
  14. Then invite your friends, and treat them to this perfect cake!
